What are seed oils, exactly?

Seed oils are vegetable oils extracted from the seeds of plants — not the fruit (olive, avocado, coconut) or the nut. To get oil out of a small, dry seed at industrial scale, manufacturers use heat, pressure, and usually a solvent called hexane. The result is a neutral, light-colored, shelf-stable oil that costs very little per liter.

Because they're so cheap and so neutral-tasting, seed oils have quietly become the dominant fat in the modern food supply. Why are people concerned about seed oils?

Omega-6 to omega-3 imbalance

Seed oils are very high in linoleic acid, an omega-6 fatty acid. Humans need some omega-6, but the modern Western diet typically delivers 15–20 times more omega-6 than omega-3. Some researchers have linked this skewed ratio to chronic, low-grade inflammation — though the direct cause-and-effect in humans is still actively debated.

Oxidation during cooking

Polyunsaturated fats are chemically fragile. When seed oils are heated repeatedly — especially in commercial deep fryers — they can produce oxidation byproducts like aldehydes that the body would rather not deal with. This is one of the more solid scientific concerns and the reason many nutrition researchers suggest using stable fats (olive oil, avocado oil, butter, tallow) for high-heat cooking.

Other researchers point to mechanistic and animal data suggesting that very high seed-oil intake, especially through ultra-processed food and restaurant frying, may contribute to inflammation, cardiovascular risk, and metabolic dysfunction over time.

What most researchers do agree on: cooking with stable fats is sensible, repeatedly reused fryer oil is best avoided, and shifting calories away from ultra-processed snacks toward whole foods is a clear win — almost regardless of where you land on the seed oil debate.

Should you avoid seed oils entirely?

Probably not — at least not as a panic move. A small amount of seed oil in an otherwise whole-foods diet is not the same risk profile as a daily intake of fried snacks, fast food, and packaged baked goods.

A more practical move: keep an eye on how often seed oils show up in your shopping cart. If most of your packaged foods list 'soybean oil' or 'canola oil' in the first few ingredients, that's a useful signal that those products are highly processed and may be worth a swap.
